Cold-Pressed vs Refined Oils: The Extraction Difference
Two bottles of the same type of oil can taste completely different depending on how they were extracted. Cold-pressing and refining start from the same raw seed but end up as very different products.
How Cold-Pressing Works
Cold-pressing extracts oil mechanically, using pressure alone rather than heat or chemical solvents. Because the process stays at a low temperature, more of the seed's natural flavor and aroma carry through into the final oil.
The traditional version of this process in India is the ghani, a wooden or stone press historically turned by bullocks and now more often driven by an electric motor, which crushes oilseeds like groundnut, sesame, or mustard between a rotating pestle and a fixed mortar. Because the ghani applies steady pressure over a longer time rather than high-speed extraction, the oil that results tends to retain more of the seed's original color, aroma, and taste compared to faster mechanical presses.
Modern cold-press units use a screw press instead of a rotating stone, but the principle is the same — seeds are fed in, crushed under mechanical pressure, and the oil is separated by gravity or a simple filter, without any added heat source. Because friction from the pressing itself generates some warmth, most cold-pressed processes are defined by staying under a specific temperature ceiling, typically kept well below the point at which heat would start noticeably degrading flavor compounds, rather than requiring zero heat generation at all.
Common Cold-Pressed Oils in India
Groundnut
A staple cooking oil across South and West India, with a mild, nutty flavor when cold-pressed.
Sesame (Til)
Common in North Indian winter cooking and pickling, with a distinct roasted aroma.
Mustard (Sarson)
Widely used across North and East India, particularly Bengal, with a sharp, pungent flavor.
Coconut
The dominant cooking oil along India's coastal south and west; cold-pressed versions keep more coconut aroma than refined.
How Refining Works

Refining is typically a multi-step process — after the initial extraction, the oil is degummed to remove natural gums and waxes, neutralized to reduce free fatty acids, bleached to lighten its color, and sometimes deodorized to remove remaining odor compounds. Each of these steps improves shelf stability and consistency from batch to batch, which is part of why refined oils are more common in large-scale commercial kitchens and packaged food production.
Solvent extraction, where used, typically relies on hexane to pull residual oil out of seed material even after mechanical pressing, which is one reason solvent-extracted oils can achieve significantly higher yields per tonne of seed than mechanical pressing alone. Regulatory standards in India require any residual solvent to be removed to permitted limits before the oil is sold, which is part of what the later refining steps are designed to ensure.
Flavor and Aroma Differences
This is the difference most people notice first: cold-pressed oil tends to carry a stronger, more distinct flavor and aroma from the original seed, while refined oil is intentionally more neutral.
This is also why cold-pressed oils are often chosen for dishes where the oil's own flavor is meant to come through, such as finishing a dish or using mustard oil in pickling, while refined oils are generally preferred for high-heat cooking or recipes where a neutral base lets other ingredients stand out.
Storage and Shelf Life
Because refining removes many of the natural compounds that can cause oil to spoil or turn rancid, refined oils generally have a longer shelf life and are more tolerant of storage conditions. Cold-pressed oils, having gone through fewer processing steps, are more sensitive to heat, light, and air exposure, so they're best stored in a cool, dark place in a tightly sealed container and used within a few months of opening.
Choosing the Right Oil for Cooking
Neither cold-pressed nor refined oil is the better all-around choice — the right one depends on how it's being used. Refined oil's higher smoke point and neutral taste make it a practical option for deep frying or high-heat stir frying, where the oil's own flavor isn't meant to stand out. Cold-pressed oil, with its lower smoke point and stronger flavor, tends to suit lower-heat cooking, dressings, or dishes where the oil itself is a deliberate part of the flavor rather than just a cooking medium.
Many households in India keep more than one type of oil on hand for exactly this reason, using a neutral refined oil for everyday high-heat cooking and a cold-pressed variety for finishing dishes, tempering spices, or recipes where the seed's own flavor is the point.
