How Dal (Lentils) Are Grown Organically
Dal is a kitchen staple, but the plant behind it does more than feed people — it feeds the soil it grows in, too. From sowing to splitting, growing dal organically involves a handful of deliberate choices that shape both the crop and the field it leaves behind.
Sowing and Growing
Toor dal (pigeon pea) is typically sown at the start of the Kharif season and grows over several months before it's ready for harvest. Seeds are usually sown directly into ploughed fields in rows spaced widely enough to let the plant branch out, since a mature pigeon pea bush can grow well over a meter tall. Unlike shorter-duration pulses, toor dal often stays in the field for five to seven months, which means it's frequently intercropped with a faster-growing companion crop like sorghum or groundnut so the land isn't left carrying only one slow-maturing plant.
Why Pulses Enrich Soil
Like other legumes, toor dal hosts bacteria in its roots that convert nitrogen from the air into a form the soil can use — the same natural nitrogen-fixing property that makes pulses valuable in crop rotation. These bacteria live in small nodules on the root system, and much of the nitrogen they fix stays in the soil even after the crop is harvested, benefiting whatever is planted in that field next. This is one of the main reasons organic farms deliberately rotate a cereal crop like wheat or sorghum with a pulse like toor dal, rather than growing the same crop in the same field season after season.
Pest and Weed Management
Without synthetic pesticides, organic dal farms rely on a mix of preventive and manual measures to keep pests and weeds in check. Intercropping with sorghum or millet can make it harder for pod-boring insects to locate the pigeon pea plants, while neem-based sprays and pheromone traps are common organic-approved tools for managing pest pressure during flowering and pod formation. Weeding is largely manual or done with simple hand tools, timed to the plant's early growth stages before its canopy closes in and starts shading out weeds on its own. Some farms also encourage natural predators, like birds and beneficial insects, by leaving field borders unmowed or planting a strip of flowering plants nearby, which gives those predators somewhere to shelter between feeding on crop pests.
Harvesting and Drying
Toor dal pods don't all ripen at once, so many farms harvest in two or three passes over several weeks rather than clearing the whole field in a single day. This staggered approach helps catch pods at the right stage — dry enough to thresh cleanly, but not so dry that they've already split and dropped their seeds in the field. Harvesting by hand, still common on smaller organic farms, also makes it easier to leave underripe pods on the plant for a later pass, something a single mechanized cut can't do as selectively.

Moong and urad are shorter-duration pulses often grown in rotation between two longer main-season crops, chana (chickpea) is a Rabi (winter) crop common across central and northern India, and masoor (red lentil) thrives in the cooler, drier conditions of the Indo-Gangetic plains. Each variety has its own sowing window, growth duration, and preferred soil type, which is part of why India's pulse-growing regions look so different from one state to the next. Maharashtra, Karnataka, and Uttar Pradesh together account for a large share of the country's toor dal production, while states like Madhya Pradesh and Rajasthan lean more heavily on chana and moong depending on local rainfall patterns.
Storing and Milling
After threshing, whole lentils are cleaned to remove dust, stones, and broken grains, then stored in a cool, dry place until they're milled. Milling is what turns a whole lentil into the split dal found in stores — the outer skin is loosened, often with a light coating of oil or water, then removed before the lentil is split along its natural seam and polished. How carefully this step is done affects how uniform the final dal looks, though it doesn't change the underlying crop or how it was grown.
